What you will need:
1 lb. Flank Steak (I actually used Sirloin and cut them into Filets..it was delicious)
1 tsp. ground cumin ( OKay I didn't actually measure this and I'm sure that I probably did triple this much...we LOVE flavor!My advice...go crazy!)
1 Red Bell Pepper, sliced (I suggest 2!)
1 Yellow Bell Pepper, sliced
(we also added 1 Jalapeno, sliced the second time...it added a good green color and just a hint of spice..oh and we also added about a 1/4 of an onion as well)
1 T. olive oil
Flour Tortillas
Guacamole
Sour Cream (if you want)
Hot sauce (if you want)
Salt and pepper
Directions:
1. Heat gril to medium-high. Season the beef with the cumin, 1/2 t. Salt and 1/4 t. Pepper. (I didn't measure any of these but just sprinkled to my little hearts content! I added lots more pepper because I love it!)
2. IN a large bowl, toss the bell pepper with the oil and 1/4 t. each of salt and pepper. (This is where we also added the jalapeno and onion.)
3. Grill the beef to the desired doneness, 4 to 5 minutes per side for medium-rare. Let rest for at least 5 minutes before slicing.
4. Meanwhile, grill the peppers, turning occasionally, until tender, 8 to 10 minutes. (I actually waited to grill this in the same pan I grilled the meat in because then I had that yummy cumin meat flavor just barely on the peppers as well.)
5. Fill the tortillas (warm) with the beef, peppers, and Guacamole. Serve with sour cream if desired.
YUMMY! Once again it says it feeds 4 but I think it only serves 2 since we haven't had leftover either time.
